This is the best soup to enjoy on a cold day, or any day really! HA HA! It is rich and delicious!

- In a 5 quart pot, brown beef, drain and set aside. In the same pot: add butter and saute onion, carrots, celery, and basil. Stir in flour, and add broth, potatoes, and beef. Cover, reduce heat and simmer, until potatoes are tender, about 15 minutes. Add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and add blend in sour cream. Serve with toasted bread.
