White Bean n Ham Soup
I love this soup for the simple fact that it is so incredibly tasty and have such great memories preparing it!
It tastes like you slaved over it all day long, when really it doesn't take very long to cook.
Each of my 5 children have helped mash the beans for this soup. I love how they would chit chat with me while they were mashing and I would be cutting up the vegetables. I look forward to having my grandkids do the same.
This pot of yumminess has a bay leaf in it. If you are special like my husband, you may get it served in your bowl of goodness. :)
This soup tastes great with garlic bread!

Instructions

In a bowl, mash 2 cans of beans and set aside.
In a large pot: saute butter, carrots, and onion. Stir in water, ham, seasonings, and whole and mashed beans.
Cook over medium heat until heated through.
Serve with garlic bread.
