Sara’s Enchilada’s

This meal is so tasty and easy for a make ahead or even freezer meal. It can be prepared ahead of time and placed covered in the refrigerator prior to baking. This is a complete meal if served with a salad on the side.

Ingredients
  • lb Hamburger (Browned & Drained (seasoned))
  • 2-15 oz Refried Beans ((with no hydrogenated oil/lard))
  • 2-15 oz Mild Enchilada Sauce
  • 1 Package of 10 Large Burrito Soft Shells
  • 8 oz Shredded Marble Jack Cheese
  • Toppings
  • Sour Cream
  • Salsa
  • Black Olives
Instructions
  1. Season hamburger with onion powder and garlic powder. Brown and drain. Set-aside. In a 9x13 pan pour half a can of enchilada sauce. Save the other half to top enchiladas. In a large bowl mix together refried beans, 1 can enchilada sauce, add hamburger. Put mixture into shells, roll shells and place one at a time in 9x13 pan. Pour remaining sauce over shells. Sprinkle cheese on top. Bake at 350 degrees until heated through and cheese melts, about 20-30 minutes.
