Pumpkin Bars & Cream Cheese Frosting

When school starts and the leaves begin to fall from the trees it is time for all things pumpkin. These bars have been a tradition in our family since I was a little girl. They are bars but are more like cake topped with cream cheese frosting. Fabulous to enjoy with a cup of coffee.

Ingredients
    Bars
  • 4 Eggs
  • 1 cup Oil
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1- 16 oz Can Pumpkin ((2 cups))
  • 2 cup Flour
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 1/2 tsp Each: ginger, nutmeg, cloves
  • Frosting
  • 4 oz Cream cheese
  • 1-2 tbsp Milk
  • 3-4 cup Powdered Sugar
  • 3 tbsp Butter
  • 1 tsp Vanilla
Instructions
  1. Mix oil and sugars until well blended. Add eggs and mix. Add pumpkin. Sift together dry ingredients and gradually stir into pumpkin mixture. Pour into a greased 15x10x2 pan. Bake at 350 degrees for 25-30 minutes, until toothpick comes out clean. Frosting: mix together cream cheese, butter, milk and vanilla. Gradually mix in powdered sugar until mixture is frosting consistency. Frost cooled bars. Cut into squares and serve.
