My Dad’s Favorite Pecan Pie

Being originally from the Midwest, we say PeCon when talking about this pie. Now living in the South most people pronounce it PeCAN with a long drawn out A! Whether you say PeCON or PeCAN, this pie is delicious! This pie is a favorite of my dad's. Holiday's would not be the same if dad was there and this was missing on the pie table.

Ingredients
  • 3 Eggs
  • 1 cup Sugar
  • 1 Can Dark Corn Syrup
  • 2 tbsp Unsalted Butter (Melted)
  • 1.5 tsp Pure vanilla extract
  • 1/8 tsp Salt
  • 1/2 cup Darkly Roasted Pecans (ground)
  • 1 cup Medium Pecan Pieces
  • 1 Pie Shell
Instructions
  1. In a mixer with a wire whisk attachment, add eggs and beat on high until frothy, about 1 minute. Add sugar, corn syrup, butter, vanilla, salt, and ground pecans. Beat on medium speed until well blended. Stir in pecan pieces. Pour into pie shell. Bake in preheated 350 degree oven for 40 minutes. REDUCE heat to 325 degrees and bake until the filling is browned on top and the crust is light golden brown, 35-40 minutes.
