Applesauce Rhubarb Muffins

These are so sweet, flavorful, tasty and moist. The applesauce and cinnamon in these tame the rhubarb tartness. I love all things rhubarb.

Ingredients
    Dry Ingredients
  • 1 1/2 cup Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • Wet Ingredients
  • 1 egg
  • 2/3 cup Light Brown Sugar
  • 2/3 cup Applesauce
  • 1/4 cup Oil
  • 1 cup Rhubarb (chopped)
  • 1 tsp Cinnamon Sugar
Instructions
  1. Mix dry ingredients. Make well in center of dry ingredients; set aside. Beat egg, brown sugar, applesauce, and oil. Add all at once to dry ingredients. Stir until moistened. Batter will be lumpy. Fold in rhubarb. Sprinkle top with cinnamon and sugar. Makes 12 muffins. Bake at 400 degrees for 18-20 minutes.
